Baked Sweet Potato with Black Beans and Avocado

Ingredients:

  1. 2 boneless, skinless chicken breasts

  2. 2 medium sweet potatoes, peeled and diced

  3. 2 tablespoons olive oil

  4. 1 teaspoon paprika

  5. 1 teaspoon garlic powder

  6. 1/2 teaspoon salt

  7. 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 425°F (220°C).

  2. Toss diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, salt, and black pepper.

  3. Spread sweet potatoes in a single layer on a baking sheet and roast for 20-25 minutes or until tender and lightly browned.
