Chicken and Vegetable Casserole Recipe

Chicken is a lean protein source, and vegetables are rich in antioxidants and fiber, making this dish beneficial for psoriasis.


  • 4 chicken breasts (approximately 150-200g each)
  • 2 zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 potato, sliced
  • 2 tablespoons olive oil
  • Salt and pepper
  • Fresh thyme or rosemary


  1. Preheat the oven to 180°C (or 160°C for fan oven).
  2. Season the chicken breasts with salt and pepper.
  3. Grease a casserole dish with olive oil. Arrange the chicken and diced vegetables in the dish.
  4. Season with salt, pepper, and fresh thyme or rosemary. Drizzle with olive oil.
  5. Bake in the preheated oven for about 30-35 minutes or until the chicken is cooked through.
  6. Remove from the oven and serve hot.

Enjoy Your Meal: Serve with bulgur pilaf or green salad.
