Vegetable Quiche Recipe

Vegetables provide antioxidants, and eggs and cheese offer protein and nutrients beneficial for skin health, making vegetable quiche a good choice for psoriasis.

Ingredients:

  • 1 whole wheat or gluten-free pie crust (store-bought or homemade)
  • 2 cups mixed vegetables (spinach, mushrooms, broccoli, etc.)
  • 4 eggs
  • 1 cup milk or cream
  • 1 cup shredded cheese (cheddar, mozzarella, etc.)
  • Salt, pepper, paprika
  • Olive oil

 Preparation:

  1. Preheat the oven to 180°C (or 160°C for fan oven).
  2. Line a pie dish with the pie crust.
  3. Sauté vegetables in olive oil until tender.
  4. In a bowl, whisk eggs with milk or cream. Stir in shredded cheese, salt, pepper, and paprika.
  5. Spread sautéed vegetables evenly over the pie crust.
  6. Pour egg mixture over the vegetables.
  7. Bake in the preheated oven for 30-35 minutes or until quiche is set and golden brown.
  8. Remove from the oven and let cool slightly before slicing.
