Stuffed Red Bell Peppers Recipe

Ground beef provides protein, and bell peppers are rich in vitamins and antioxidants, making stuffed peppers a suitable dish for psoriasis management.

Ingredients:

  • 6 large red bell peppers
  • 250g ground beef
  • 1 cup rice
  • 1/2 cup pine nuts or chopped walnuts
  • 1 medium onion, diced
  • 2 tablespoons tomato paste
  • 1 tablespoon pepper paste
  • 1/3 cup extra virgin olive oil
  • Salt, pepper, cumin, chili flakes
  • 2 cups water or vegetable broth

 Preparation:

  1. Cut the tops off the bell peppers and remove seeds and membranes.
  2. Rinse rice under cold water.
  3. In a bowl, mix ground beef, rice, pine nuts or walnuts, diced onion, tomato paste, pepper paste, olive oil, and spices.
  4. Stuff bell peppers with the mixture.
  5. Place stuffed peppers in a baking dish lined with parchment paper.
  6. Pour water or vegetable broth into the baking dish.
  7. Bake in a preheated oven at 180°C for 45-50 minutes or until peppers are tender.
  8. Remove from the oven and serve warm.
