Ingredients:
- 6 large red bell peppers
- 250g ground beef
- 1 cup rice
- 1/2 cup pine nuts or chopped walnuts
- 1 medium onion, diced
- 2 tablespoons tomato paste
- 1 tablespoon pepper paste
- 1/3 cup extra virgin olive oil
- Salt, pepper, cumin, chili flakes
- 2 cups water or vegetable broth
Preparation:
- Cut the tops off the bell peppers and remove seeds and membranes.
- Rinse rice under cold water.
- In a bowl, mix ground beef, rice, pine nuts or walnuts, diced onion, tomato paste, pepper paste, olive oil, and spices.
- Stuff bell peppers with the mixture.
- Place stuffed peppers in a baking dish lined with parchment paper.
- Pour water or vegetable broth into the baking dish.
- Bake in a preheated oven at 180°C for 45-50 minutes or until peppers are tender.
- Remove from the oven and serve warm.
