Red Lentil Koftas Recipe

Red lentils are rich in protein and fiber, and spices add flavor without aggravating psoriasis, making these koftas a suitable choice.

Ingredients:

  • 1 cup red lentils
  • 2 cups water or vegetable broth
  • 1 medium onion, grated
  • 2 cloves garlic, minced
  • Half a bunch of parsley, finely chopped
  • 1/3 cup fine bulgur
  • 1 tablespoon tomato paste
  • 1 tablespoon pepper paste
  • 1 teaspoon ground cumin
  • 1 teaspoon red pepper flakes
  • Salt and pepper
  • Olive oil

 Preparation:

  1. Rinse red lentils under cold water. In a pot, combine lentils with water or vegetable broth. Bring to a boil, then reduce heat and simmer until lentils are soft and liquid is absorbed.
  2. In a pan, sauté grated onion in olive oil until translucent. Add minced garlic and sauté until fragrant.
  3. Stir in tomato paste and pepper paste, cooking for a few more minutes.
  4. Drain cooked lentils and add them to the onion mixture. Stir in bulgur, chopped parsley, ground cumin, red pepper flakes, salt, and pepper. Mix well.
  5. Shape the mixture into small kofta balls.
  6. Place koftas on a lightly greased baking sheet. Bake in a preheated oven at 180°C for 20-25 minutes or until golden brown.
  7. Remove from the oven and serve hot.
