Ingredients:
- 1 cup red lentils
- 2 cups water or vegetable broth
- 1 medium onion, grated
- 2 cloves garlic, minced
- Half a bunch of parsley, finely chopped
- 1/3 cup fine bulgur
- 1 tablespoon tomato paste
- 1 tablespoon pepper paste
- 1 teaspoon ground cumin
- 1 teaspoon red pepper flakes
- Salt and pepper
- Olive oil
Preparation:
- Rinse red lentils under cold water. In a pot, combine lentils with water or vegetable broth. Bring to a boil, then reduce heat and simmer until lentils are soft and liquid is absorbed.
- In a pan, sauté grated onion in olive oil until translucent. Add minced garlic and sauté until fragrant.
- Stir in tomato paste and pepper paste, cooking for a few more minutes.
- Drain cooked lentils and add them to the onion mixture. Stir in bulgur, chopped parsley, ground cumin, red pepper flakes, salt, and pepper. Mix well.
- Shape the mixture into small kofta balls.
- Place koftas on a lightly greased baking sheet. Bake in a preheated oven at 180°C for 20-25 minutes or until golden brown.
- Remove from the oven and serve hot.
