Baked Eggplant and Bulgur Pilaf Recipe

Eggplant is rich in antioxidants, and bulgur provides fiber and nutrients beneficial for psoriasis management.

Ingredients:

  • 2 large eggplants
  • 1 cup bulgur
  • 2 cups water or vegetable broth
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper
  • Cumin, paprika, chili flakes (optional)

Preparation:

  1. Preheat the oven to 200°C (or 180°C for fan oven).
  2. Slice eggplants lengthwise, sprinkle with salt, and let sit for 15 minutes. Rinse and pat dry.
  3. Arrange sliced eggplants on a baking sheet lined with parchment paper. Roast in the oven for about 20 minutes or until tender.
  4. Rinse bulgur under cold water. In a pot, sauté diced onion in olive oil until translucent.
  5. Add bulgur to the pot, stir to coat with oil. Add water or vegetable broth, salt, and optional spices. Bring to a boil, then reduce heat and simmer until bulgur is cooked and liquid is absorbed.
  6. Remove roasted eggplants from the oven. Serve with bulgur pilaf.
