Ingredients:
- 2 large eggplants
- 1 cup bulgur
- 2 cups water or vegetable broth
- 1 medium onion, diced
- 2 tablespoons olive oil
- Salt and pepper
- Cumin, paprika, chili flakes (optional)
Preparation:
- Preheat the oven to 200°C (or 180°C for fan oven).
- Slice eggplants lengthwise, sprinkle with salt, and let sit for 15 minutes. Rinse and pat dry.
- Arrange sliced eggplants on a baking sheet lined with parchment paper. Roast in the oven for about 20 minutes or until tender.
- Rinse bulgur under cold water. In a pot, sauté diced onion in olive oil until translucent.
- Add bulgur to the pot, stir to coat with oil. Add water or vegetable broth, salt, and optional spices. Bring to a boil, then reduce heat and simmer until bulgur is cooked and liquid is absorbed.
- Remove roasted eggplants from the oven. Serve with bulgur pilaf.
